I have posted a lot of lemon recipes on here so far, but I have no regrets about that. Lemon is fantastic. It smells delightful, it tastes good, it looks pretty, its amazing! A couple friends of mine who live on the east coast are a little upset with me for not making all these lemon treats when I lived near them. I am a kind friend though and so I am providing the recipe so they can make them on their own! This is a perfect summer cookie. Perfect for BBQ’s, family gatherings, or just a sweet treat on a warm day. Go ahead, make these and thank me in the comment box below!

Lemon & White Chocolate Cookies
Ingredients
- 3 1/4 cup flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cornstarch
- 1 cup butter, room temp
- 1 cup brown sugar
- 3/4 cup sugar
- zest of 2 lemons
- 1 eggs
- 2 egg yolk
- 1/2 tsp lemon extract
- 1 tsp vanilla
- 1 1/2 cups white chocolate chips
Instructions
- In separate bowl, mix together the flour, baking soda, salt, and cornstarch and set aside.
- Add the white sugar to a small bowl or a food processor and add the lemon zest. Pulse or mix with your hands until the sugar is yellow.
- In mixing bowl of stand mixer, cream together the butter, brown sugar, and lemon white sugar.
- Add in egg and egg yolks, vanilla, and lemon extract and mix until combined.
- Add in the flour mixture and mix slowly until just combined then add in the white chocolate chips.
- Divide dough into 3oz portions and chill dough for at least 30 minutes.
- Transfer to baking sheets and bake at 375°F for 14-16 minutes or until lightly golden around the edges. Top with maldon sea salt and more white chocolate (optional) and enjoy!
